The lists of Score Descriptors in the Sorcerer main book (or in Sword & Sorcery, et cetera) are not meant to be suggestions -- they are in fact intended to be THE list of possible descriptors for a given game.

I consider the free-form method to be badly, badly flawed for a game like Sorcerer; all you get is schwa, mess, UA characters running around trying to Vulcan nerve-pinch one another. [1]

That said, it's a common practice for groups starting up a game to specifically customize their own list of descriptors for each Score that reflect the kind of setting and tone the group is aiming for.

Descriptors are a powerful tool for setting the tone of a world. The character's backgrounds and the setting's themes can be powerfully communicated through well wrought descriptors. Once a list is set, the groups should stick to it in order to commit their character to the setting.
